Water system setup — how many litres do I need?

Setting up the water system in my Transit LWB. It's a couples van for weekend trips and the occasional week away. We want a sink in the kitchen and a small shower (probably just a portable one). How many litres of fresh water should I plan for? I've seen tanks from 25L up to 100L. Also, do I need a water heater or is a simple immersion element enough? Trying to keep the weight down as my payload isn't massive.

For a couples van with a sink and portable shower, I'd recommend 60-70L fresh water and a 40L grey water tank. That gives you about 3-4 days of careful use. We use about 15L per day between washing up, cooking, and quick showers. For heating, a simple 12V inline water heater works well for washing up. For showers, look at the Eccotemp L5 portable gas water heater — it's about £120 and gives you proper hot showers without draining your electrical system. Weight-wise, remember that water is 1kg per litre, so 70L = 70kg. Factor that into your payload calculations!
